I thought this would be a nifty receipe to share with some of my readers.This bread is absolutely delicious.
Here is the receipe
4 eggs
1 cup of natural cane sugar
1/2 cup of canola oil
1/2 cup of reduced fat (2 percent) milk
1 1/2 teaspoons of vanilla extract
3 cups of lightly packed grated zucchini (about two large or three medium zucchinis)
Zest from one small orange
3 cups of whole wheat pastry flour
1 teaspoon of baking powder
1 teaspoon of baking soda
1/2 teaspoon of ground nutmeg
2 teaspoons of ground cinnamon
1/2 teaspoon of salt
1 cup of chopped raw shelled pistachios or walnuts
1 cup of dried cranberries
1. Position the rack in the oven to the center and preheat your oven for about 350 degrees. Coat 9x5 inch pans with cooking spray
2.place eggs sugar oil milk and vanilla in a large mixing bowl and whisk to combine
3.In a seperate medium bowl combine flour baking powder baking soda nutmeg cinnamon and salt whisk to blend. Stir dry ingredients into a wet ingredients. Fold in nuts and dried cranberries. Stir all the ingredients but do not over mix the ingredients or your dough will be tough
4.Divide your batter into the loaf pans and bake on the center rack for 50 -60 minutes until golden brown.
5 . Remove the pans and allow them to cool for about 7 to 10 mins . Then remove from the pans and allow your fresh bread to cool completely for about 2hours.
6. Slice and enjoy :)

Healthy Choice: Corn Tomato Arugula Salad with Carrots
I am a big finatic for a great salad . I guess I am in love with all the different colors I always require a colorful food presentation. Here is a great salad you can enjoy at home.
Red Wine Vinaigrette
1. medium clove of garlic (crushed)
1 teaspoon of Dijon Mustard
2 tablespoons of redwine vinagrette plus 2 teaspoons of red wine vinegar
1/2 a cup of extra virgin olive oil
Salad
5 ounces ( about 6 packed cups ) baby arugula leaves
1/2 bunch of fresh italian parsley , chopped ( about atleast 1/2 a cup)
1 large ear of fresh corn shucked silk removed and kernels cut off the cob
1 pint rainbow cherry tomatoes , halved or medium heirloom tomatoes ( assorted colors preferred) cut into bite size pieces
1/2 a cup of chopped carrots
1. In a small bowl whisk together all vinagrette ingredients plus salt and pepper to taste.
2. Place the arugula and half of the chopped parsley in a large bowl and toss with half of the vinaigrette. Then transfer the salad to a bigger bowl or platter.
3. Using the same large bowl add corn kernels with the remaining parsley and toss the remaining dressing and half a pinch of salt
4. place the corn in the mixture along with the chopped carrots in the center of the arugula on the bowl or bigger platter. Arrange tomatoes around the corn and carrots then lightly drizzle with the remaining vinaigrette.

PESTO LOVERS: FOOD FOR THE SOUL
I love Pesto don't you? I wanted to share some great receipes that will make your pallete sing.
Three Herb Pesto
1/2 a cup fresh oregano leaves
1/2 a cup of fresh basil leaves
2 tablespoons of fresh parsley leaves
1/4 cup pistachio nuts
2-4 cloves of garlic to taste
3 teaspoons of fresh lemon juice
2 tablespoons of extra virgin olive oil
1/4 a cup of grated Parmesan Romano
or Asiago cheese
1/4 teaspoon of salt
1. Place first five ingredients ( oregano through garlic) in a blender or food processor and blend. Slowly add lemon juice d olive oil , and blend until pureed.
2. Transfer the mixture to a medium bowl and stir in the cheese; add salt to taste.
Refrigerate for up to 5 days
Cilantro Pesto
1/2 cups fresh cilantro leaves and tender stems (2 bunches)
2 cloves of garlic
1/4 cup of walnut pieces lightly toasted
1 small jalepeno halved and seeded
1/4 cup of freshly grated Parmesan or Asiago cheese
1/4 teaspoon of salt
1 tablespoon of fresh lemon juice
1 tablespoon of lime juice
1 tablespoon extra-virgin olive oil
1. Place first six ingredients ( cilantro through salt) in a blender or food processor and blend.
2.Slowly add lemon juice,lime juice,olive oil,and process until well mixed.
Serve and you can refrigerate it up to 5 days
Sun Dried Tomato Pesto
1/4 cup of sun dried tomatoes ( not in oil )
3-4 cloves of garlic to taste
1 tablespoon of chopped fresh parsley
1/4 a cup of grated Parmesan cheese
2 tablesppons of walnut pieces, lightly toasted
1/4 teaspoon of salt
1/4 teaspoon of black pepper
2 tablespoons of extra virgin olive oil
1/2 teaspoon of balsamic vinegar
1. Soak the sun dried tomatoes in very hot water until it softens ( approx 5-10 mins) drain and save the liquid
2. Place the tomatoes and the remaining pesto ingredients in a blender or food processor and process until well mixed . If it appears to be too thick just blend in a little hot water.

The Perfect Smile: Teeth Whitening Dos and Donts
Everyone wants the perfect smile and the perfect white teeth but it does come with responsibility. I wanted to touch on this area because I know I have tried various at home whiteners that well just did more damage than good. Here are some facts you should know.
1. If you are trying to whiten your smile make sure the whitening gel will not destroy your tooth enamel.
2. Make sure the whitening gel has a solution or pre rinse that you can use prior to the gel
3. Do not go with the notion the more the better. When you put more than recommended it can damage your gum line with abrasions.
4. Find a complimenting agent to use after like a toothpaste that can compliment your product as well as the mouthwash.
5. Understand that at home whiteners are just a temporary fix and you should go to your dentist for a follow up cleaning and polishing.
6. You can remove tartar carefully with your at home plaque remover tools but keep in mind you must be patient and have a steady hand so you can remove access build up.
7. Always have your dental floss ready or Plackers the little hand held floss handy for those hard to reach spots.
8. Once you removed the build up with your plaque remover and floss follow up with Listerine ( Yellow ) to kill any bacteria.
9. If you are suffering from gum bleeding you should consult your dentist to get a medicinal mouth wash that will help you from bleeding and you must take this daily.
10. Love your teeth. Did you know your teeth is so important in our daily lives its not just for show. A healthy smile is a great thing to have. If you are a singer you must understand how healthy your mouth must be in order to sing without any issues .
